Wild, earthy mushrooms sautéed in herbs, garlic and white wine take up residence in a tower of puff pastry layered by hand at Café Bleu. The labor-intensive creation is served in a pond of devilish mushroom cream sauce sporting a twirl of truffle oil. The texture is light, but the flavors are rich and alluring.
